She loves strawberries. No, she adores strawberries! And I had a cake mix in the pantry and a lemon in the fridge. So I decided to make Strawberry Lemonade Cupcakes. I combined three of my favorite recipes to come up with these, and they were an epic success! Everyone loved them, not just the birthday girl.


  • 1 box yellow or white cake mix
  • 1 (3.4 oz) box vanilla pudding mix
  • 4 eggs
  • 1 cup sour cream
  • 1/2 cup water
  • 1/2 cup oil
  • 1/4 cup strawberry jam
  • 1 tsp lemon zest

Lemon Glaze

  • 1/2 cup powdered sugar
  • 2 Tbsp fresh lemon juice

Strawberry Lemon Cream Cheese Frosting

  • 4-ounces cream cheese, softened to room temperature
  • 1/2 cup butter, softened

pinch of salt

  • 1-2 tsp lemon zest
  • 4-5 cups powdered sugar
  • 2 Tbsp strawberry jam


  1. Combine all cake ingredients in a large mixing bowl. Beat for about 2 minutes, or till smooth. Pour batter into muffin cups filled with paper liners. Fill just over half way full. (I ended up with 26 cupcakes.)
  2. Bake at 350° for about 15-20 minutes, or till a toothpick comes out clean. Let cool for about 5-10 minutes.
  3. Combine glaze ingredients in a small bowl and whisk till smooth. Brush glaze evenly over warm cupcakes. Allow cupcakes to cool completely, then frost. Garnish with fresh strawberries if desired.
