1 cup 200 g sugar
1/4 cup 60 ml water
1 teaspoon lemon juice
1/2 cup 120 ml heavy cream
1 tablespoon unsalted butter

For the Chocolate Chip Cream Cheese Filling
1/2 cup 115 g unsalted butter, room temperature
1 1/2 cups 190 g confectioners’ sugar
Pinch of salt
1 teaspoon pure vanilla extract
1 8 oz 250 g package of cream cheese, cut into cubes, very soft
3/4 cup 120 g mini chocolate chips

For the Glossy Dark Chocolate Frosting
1/2 cup 115 g unsalted butter
1 1/2 cups 300 g sugar
1 1/4 cups 150 g best-quality dark cocoa powder, sifted
Generous pinch of salt
3/4 cup 180 ml heavy whipping cream
1/2 cup 120 ml sour cream (full fat)
2 teaspoons pure vanilla extract
