For this hand pie recipe, you can make homemade pie crust but I opted for store bought because I wanted these to be quick and easy.  The best way to serve these pies is warm with a drizzle of homemade salted caramel sauce and a dollop of whipped cream of top.  It makes it a messier treat but it’s completely worth it!

The key to a good apple pie is the filling.  To make it, combine water, cornstarch, brown sugar, white sugar, cinnamon, nutmeg, cardamom, and salt together in a pan over medium-high heat.  Once it thickens up, add in the apples and cook for 10 minutes.

Ingredients

  • 2 pie crusts
  • 2 medium apples
  • 3/4 cup water
  • 1 tablespoon cornstarch
  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon cardamom
  • Pinch of salt
  • Egg wash
  • Sugar for sprinkling

Instructions

  1. Preheat oven to 400 degrees and line a baking sheet with parchment paper or a silicon mat.
  2. In a small mixing bowl, whisk together water and cornstarch. Pour into a medium pot over medium-high heat with brown sugar, white sugar, cinnamon, nutmeg, cardamom, and salt. Once the sauce begins to thicken up, add in the diced apples and reduce the heat to cook for 10-12 minutes to soften the apples, occasionally stirring.
