Very tasty dish and will go on my “redo” list. I used a head of cauliflower and chopped it up very fine, put it in my rice cooker for 9 minutes with about a 1/2 cup of water and it turned out great. To spice it up a bit, I’ll buy HOT enchilada sauce. YUM I made this for dinner, it was quick and quite delicious, my teenager had seconds. The only thing I did different was that we did not have access to cauliflower dice so I steamed some and used my chopper to make my own rendition.
Very Good! Very filling! Followed the recipe exactly but doubled it!Will definitely make again!

ingredients

  • 2 tablespoons coconut oil (for searing chicken)
  • 1 pound of boneless, skinless chicken thighs
  • 3/4 cup red enchilada sauce (recipe from Low Carb Maven)
  • 1/4 cup water
  • 1/4 cup chopped onion
  • 1- 4 oz can diced green chiles

toppings (feel free to customize)

  • 1 whole avocado, diced
  • 1 cup shredded cheese (I used mild cheddar)
  • 1/4 cup chopped pickled jalapenos
  • 1/2 cup sour cream
  • 1 roma tomato, chopped
Optional: serve over plain cauliflower rice (or mexican cauliflower rice) for a more complete meal!
