My new favorite meatball! I subbed nonfat greek plain yougurt instead of mayo and i realized i didnt have celery until last minute so used some red onion, came out awesome! They didnt stand a chance, made 12 and my husband pratically ate them all on one sitting These are so Good! Easy to make, and full of flavor. I doubled the recipe and used Texas Pete’s wing sauce. Great with blue cheese or ranch dressing.Made these meat balls and they were outstanding!!! Messy when kneading the ingredients. Used a melon baller and baking dishes to keep neat and clean.

HERE IS HOW TO MAKE OUR KETO BUFFALO CHICKEN MEATBALLS:

Makes about 18 meatballs,  6 servings , 3 per serving
  • 1lb ground chicken
  • 1 egg, beaten
  • 2 sprigs of green onion, finely chopped
  • 1 celery stalk, trimmed and finely diced
  • 1 tablespoon almond or coconut flour
  • 1 tablespoon mayonnaise
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp pink sea salt
  • 1 tsp ground black pepper
  • 1 cup of buffalo wing sauce
Instructions
Preheat the oven to 400. Spray a sheet pan with non stick cooking spray or grease with Olive oil, coconut oil or butter.  (I use Olive oil)
