Ingredients:

4 large baking potatoes
8 slices bacon
8 green onions, sliced
1 cup shredded Cheddar cheese
1 cup sour cream
1/2 cup milk
4 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon butter

Directions

  1. Bake potatoes in a pre-heated oven (350F) for 1 hour. 
  2. While potatoes are baking, cook bacon in a skillet over medium high heat until evenly browned. Place on a plate, crumble and set aside. 
  3. When potatoes are ready, allow to cool for a few minutes then slice each lengthwise. 
  4. Scoop the flesh in a large bowl, leaving the skins. Add 1/2 onions, 1/2 cheese, sour cream, milk, butter, salt and pepper to the bowl with potato flesh. Mix with a hand mixer until smooth. 
  5. Spoon mixture back into potato skins then divide remaining onions and cheese to top potatoes.
